Recipe Review: Vegan Pumpkin Cookies

Grab your witch hats and broomsticks y'all; it's officially fall! This season, I want to share my favorite recipes and make fall cooking as easy as possible for everyone. There are thousands of fabulous recipes out there, but choosing one isn't always easy. That's why I'm bringing you guys the best of the best. Today's recipe is Vegan Pumpkin Chocolate Chip Cookies.
If you love pumpkin flavored anything, MAKE THESE NOW! I've made my fair share of pumpkin muffins, cookies, and bread, and nothing compares to how delicious these things are. This recipe comes from the lovely Ashley at Baker by Nature. Just take a look:

Before I proceed, I must tell you that I am not much of a baker. I can cook anything you ask me to, but baking is where I fall short. So when I bake, I need easy recipes. Like... really easy. Not only were these cookies super simple, but they were quick, vegan, and most importantly, DELICIOUS!
Let's discuss what I altered. You'll notice my cookies do not have chocolate chips but instead chocolate chunks. That's personal preference. A bag of vegan chocolate chips—and vegan chocolate in general— is super expensive. I just so happened to get lucky and found these Enjoy Life Mega Chunks on sale. To be clear, I still haven't found the trick to buying vegan chocolate yet. My best advice is to find a reasonably priced vegan dark chocolate bar like Endangered Species or Divine, and roughly chop it until it's small enough to mix into your cookies. If they're sweeter than you'd like, you can cut down on the sugar content in your cookies, and it should taste fine. If you just can't find any vegan chocolate that works for you, that is okay! Just use what you like.
These are great cookies if you want to embrace the fall season. No matter if you eat them while you're curled up by the fire, or standing over your kitchen sink at 8AM like I did, these things will soothe your soul. Bring them to your next family get-together or keep them all to yourself! Regardless of what you do with them, make them and eat them and feel all the fall feels.
